docs: Redirect glossary to the wiki

Whilst we work to update the
[copy of the glossary currently hosted in the wiki](https://github.com/kata-containers/kata-containers/wiki/Glossary),
update the in-tree glossary doc to refer to that wiki version.

Fixes: #3505.
