docs: Remove kata-proxy references in documentation
This PR removes the kata-proxy references in VSocks documentation, as this is not a component in kata 2.0 and all the examples that were used belonged to kata 1.x. Fixes #3980 Signed-off-by: Gabriela Cervantes <gabriela.cervantes.tellez@intel.com>
